Chicken, Spinach & Tomato Pasta

Here's a quick meal that I make when I'm short on time and still want a healthy meal...I don't follow a specific recipe, but use what I have on hand.



For this particular dinner I used: (but may substitute items in parenthesis)

*1 box penne pasta (any pasta will work)

*1 can chicken (no chicken, leftover chicken breast, mild Italian sausage)

*2 or 3 handfuls of grape tomatoes (red, yellow, orange peppers, canned diced tomatoes)

*4 or 5 handfuls of fresh baby spinach (froz. green beans, froz. broccoli, froz. sugar snap peas)

*1-2 Tbsp Italian seasoning

*1-2 Tbsp olive oil

*grated Parmesan cheese


1. While pasta water is coming to a boil, prepare the veggies - a bit of thawing, chopping, rinsing, etc.

2. Cook pasta according to package directions.

3. In a large skillet, combine olive oil and veggies until crisp tender or cooked down a bit, then add chicken and heat through.

4. Serve veggies over cooked pasta and top with grated Parmesan cheese.

5. Enjoy!
