Watermelon Popsicles
1. Cut up chunks of watermelon, remove any seeds, and place in plastic cup.
2. Using a fork, poke and crush the watermelon until juice fills in all the gaps between pieces.
3. Place a wooden stick in the cup.
4. Freeze for about 2 hours.
We found this recipe in a book called Big Snacks, Little Meals. I really like this colorful, picture-filled cookbook with lots of easy recipes. It's on my amazon wish list...
