Yogurt Pancakes

I find myself making homemade, made from scratch breakfast many mornings each week except those few mornings we need to be out of the house early...pancakes, scrambled eggs, waffles, fried egg sandwiches, french toast and so on. 

This bright orange Betty Crocker cookbook (circa 1983) has been so useful for simple, easy recipes beyond breakfast specials.  I like it because most of the ingredients needed are so basic...no fru-fru spices that you only need a pinch of, no extensive prep work, no frills...just the way I like cook.  Just your basic meat and potatoes kind of meals.


When I cook or bake I like to sneak in extra goodness that my kids don't even notice.  My kids are not picky eaters in general and I don't have to work hard to get them to eat a variety of healthy foods, but I figure it can't hurt to hide extra nutrition when I can.

This morning when I was grabbing pancake ingredients, I noticed one variation that used yogurt in the place of milk.  Hmm...that sounded like a yummy alternative, maybe not much healthier, but with added calcium!

They were so good!!!  My kids devoured them even faster than "normal" pancakes!  The pancakes were very moist and fluffy.


Yogurt Pancakes (makes about twelve 4-inch pancakes)

1 egg
1 cup flour  (sometimes I substitute a little bit of ground old fashioned oats for a bit of flour...he, he!)
1 1/4 cup yogurt (I used vanilla flavored)
2 Tbsp vegetable oil
2 tsp baking powder
1/4 tsp baking soda
milk

Whisk the wet ingredients together then add the dry ingredients stirring until well blended.  Add milk as needed to thin the pancake batter to your preference.  I found that I needed to cook the yogurt batter a little longer than normal batter so be sure to use a lower heat to prevent burning while waiting for the inside to cook.

I usually add in several "toppings" to the batter (one topping at a time) since we have a variety of preferences...a few plain, a few with chocolate chips, a few with fruit...thawed blueberries or raspberries.

Obviously, I added thawed raspberries to the batter today.  Oh my...so good!!!  I love a cool bowl of vanilla yogurt with fruit and this was...can I say it again?!  Yummy!!!

Yogurt pancakes will be a regular addition to our homemade breakfast repertoire!!!

If you weren't so busy, I'd have you come make breakfast for my guests...they look very yummy, indeed!
