My One Good Recipe to Share

I'm not the girl that people ask to share her recipes with them. In fact, it's been said that maybe I should ask others for their recipes rather than coming up with my own. Agreed. I believe my husband will attest to the fact that more often than not, I am a better cook today than I was 10 years ago. And that's because I've asked people for recipes. Lesson learned. If only I could get on the ball with meal planning...

Anyhow, I came across a recipe that is worthy of sharing. If you'd been at my house eating with us tonight, it may have been the first time someone's asked me for a recipe. Seriously. I've tweaked it slightly to our tastes or what I have on hand, but I keep the "base" of the recipe the same. Of course, for any of you excellent chefs out there, this is totally old news.

Chicken Scampi (the original version - Shrimp Scampi)

3 tbsp olive oil
3 tbsp unsalted butter
6 cloves garlic, peeled and finely chopped
6 chicken tenders, cut in pieces (3/4 lb. shrimp, shelled and deveined)
1/3 c dry white wine
1 tbsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
3 tbsp chopped parsley (I used dried and don't know how much...)
3/4 lb. angel hair pasta

1. Heat 2 tbsp of the oil and 2 tbsp of the butter in a large skillet over medium heat. Add garlic and cook 1 minute. Add chicken and cook until no longer pink. Stir in wine, lemon juice, salt and pepper. Cook 2 minutes. Stir in parsley and remove from heat.

2. While chicken is cooking prepare pasta following pasta directions. Reserve 1/2 c of the cooking liquid and drain.

3. Add pasta to chicken in skillet and toss to coat. Stir in cooking liquid and remaining tbsp of olive oil and butter. Stir until pasta is coated and butter melted. Serve immediately.

Depending on what we have in the fridge and because I like color in my food I add in veggies to the skillet once the chicken is mostly cooked. Peppers are great! Tonight I added a whole bag of baby spinach...oh, yum! Who needs Olive Garden with this recipe!!!

my hubby is not a fan of Olive Garden so i no longer get to enjoy their chicken scampi...i could taste it as i was reading your recipe!!! I WILL be making this.

oh, and the meal planning thing... I'm right there with you.

I know what you mean about the comments...sometimes you want to tap the screen and say "anybody there?" (although I'm lucky if I have anyone read my blog since I update it so infrequently, LOL!).
